  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon maple syrup
  • 2 teaspoons Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Kosher salt and pepper to taste
  • 1 medium head of broccoli
  • Cooked rice for serving
  • Chopped parsley for garnish

Instructions

  1. In a mixing bowl, combine olive oil, balsamic vinegar, maple syrup, Italian seasoning, onion powder, garlic powder, smoked paprika, salt, and pepper.
  2. Cut the chicken into 1-inch pieces and add to the marinade. Coat well and let it marinate for at least 15 minutes.
  3. While the chicken marinates, cut broccoli into florets and toss with olive oil, salt, and pepper.
  4. Preheat the air fryer to 380ºF (193ºC).
  5. Arrange marinated chicken in the air fryer basket in a single layer and cook for 10-12 minutes until cooked through.
  6. Shake the basket to redistribute chicken; add broccoli and cook for an additional 6-8 minutes.
  7. Serve over cooked rice and garnish with chopped parsley if desired.
