  • 2¼ cups all-purpose flour
  • 2 teaspoons kosher salt
  • 1½ teaspoons apple pie spice
  • 1 teaspoon ground cinnamon
  • ¾ teaspoon baking soda
  • ½ teaspoon cream of tartar
  • Turbinado sugar, for rolling
  • ¼ cup apple butter

Instructions

  1. Preheat your oven to 350°F (180°C) and line 2 baking sheets with parchment paper.
  2. In a stand mixer, cream together softened butter, dark brown sugar, and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract; mix until combined.
  4. In a separate bowl, whisk together flour, salt, apple pie spice, cinnamon, baking soda, and cream of tartar. Gradually add to the butter mixture until just combined.
  5. Scoop dough into balls, roll in turbinado sugar, and refrigerate for at least 30 minutes.
  6. Bake cookies for 13-16 minutes until edges are set; let cool for about 20 minutes before transferring to wire racks to cool completely.
