  • 2 medium sweet potatoes
  • 2 Honeycrisp or Gala apples
  • 1/2 red onion
  • 4 garlic cloves
  • 4 cups vegetable stock
  • 1 cup organic heavy cream
  • 12 cups mild cheddar cheese, shredded
  • 2 Tbsps Extra virgin olive oil
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1/2 tsp cayenne pepper
  • 1 cup raw pecans, chopped
  • 1/2 cup organic rolled oats
  • 2 Tbsps raw honey, organic
  • 1 Tbsp organic all-purpose flour
  • 23 Tbsps unsalted butter, softened at room temp.

Instructions

  1. Preheat oven to 400°F (200°C). Peel and cube sweet potatoes. Toss with olive oil and spices; roast for 25 minutes.
  2. In a large pot, heat olive oil over medium heat. Sauté chopped onion and minced garlic until softened.
  3. Add roasted sweet potatoes and sliced apples to the pot; pour in vegetable stock and simmer for 10 minutes.
  4. Blend until smooth using an immersion or standard blender. Stir in heavy cream and cheddar cheese until melted.
  5. Prepare topping by mixing chopped pecans, rolled oats, honey, flour, cinnamon, and softened butter; spread onto an oven-safe dish.
  6. Bake under broiler for about 5 minutes until golden brown.
  7. Serve soup topped with crunchy mixture.
