  • 1 lb ground chicken
  • 1 egg
  • 1 tsp olive oil
  • 1/2 of a yellow onion, diced
  • 1/2 of a Granny Smith apple, peeled and diced
  • 1 tsp soy sauce
  • 1/2 c fine breadcrumbs
  • 2 oz cheddar cheese, freshly grated
  • 1/4 cup parsley, chopped
  • 1/4 cup walnuts, finely diced
  • 1 1-inch piece of ginger, grated
  • 1 tsp salt
  • Freshly cracked black pepper and cayenne to taste
  • 2 large or 3 medium sweet potatoes
  • 2 tsp butter
  • 2 Tb maple syrup
  • 1/2 tsp each: cinnamon, coriander, cumin, and nutmeg
  • Salt and cayenne to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Bake sweet potatoes for 60-75 minutes until tender.
  3. Sauté onion and apple in olive oil until softened; cool.
  4. In a bowl, mix chicken, egg, breadcrumbs, cheese, herbs, sautéed mixture, salt, and pepper.
  5. Shape into 2-inch meatballs; place on a greased baking sheet.
  6. Bake for 15 minutes until cooked through.
  7. Mash baked sweet potatoes with butter, maple syrup, and spices.
