  • 45 lb beef shoulder roast
  • 2 tablespoons neutral oil
  • 2 cups fresh apple cider
  • 2 cups chicken stock
  • 2 tablespoons dijon mustard
  • 1 tablespoon dehydrated minced onion
  • 1 head of garlic, top sliced off opposite of the root end
  • 3 rosemary sprigs
  • 4 thyme sprigs
  • 1 red onion, cut into thick slices
  • 2 firm apples, peeled and cut into wedges
  • Kosher salt
  • Freshly cracked black pepper

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Season the beef shoulder with salt and pepper. Sear in a Dutch oven over medium-high heat until browned on all sides.
  3. In a bowl, whisk together apple cider, chicken stock, dijon mustard, and dehydrated minced onion.
  4. Pour the braising liquid over the beef, add garlic and herb bundle, then cover and transfer to the oven.
  5. Braise for about 3 hours. Add sliced onions and apples during the last 30-45 minutes of cooking.
  6. Let rest in the liquid before serving.
