  • 3/4 cup brown sugar
  • 1/2 cup applesauce
  • 1 tsp vanilla
  • 1 egg
  • 1 1/2 cups rolled oats (certified gluten-free)
  • 1 cup shredded or finely diced apple (Granny Smith, Fuji, or Gala)
  • 1/2 cup chopped walnuts
  • 1 cup powdered sugar
  • 45 tsp milk (of choice)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the gluten-free flour, cinnamon, nutmeg, baking soda, and salt.
  3. In another bowl, cream the softened butter and brown sugar until light and fluffy.
  4. Mix in the applesauce, vanilla, and egg until well combined.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. Fold in the rolled oats, diced apple, and walnuts if using.
  7. Scoop tablespoon-sized portions onto a lined baking sheet, spacing them apart.
  8. Bake for 12–15 minutes or until golden brown around the edges.
  9. Let cool before serving.
