- 2 teaspoons canola or vegetable oil
- 2 cloves garlic (minced)
- ½ tablespoon soy sauce
- ½ tablespoon Chinese mushroom sauce
- Sesame seeds (for garnish)
- Salt and pepper to taste
- Bring salted water to a boil in a large pot. Prepare an ice bath in a bowl.
- Add bok choy to boiling water for 1 minute; drain and transfer to the ice bath.
- In a skillet over high heat, heat the oil and sauté garlic for about 30 seconds until fragrant.
- Add bok choy and stir-fry for 2-3 minutes until lightly browned.
- Stir in soy sauce and mushroom sauce; cook for an additional minute.
- Serve immediately, garnished with sesame seeds, salt, and pepper.
