  • ½ pound baby bok choy
  • 2 teaspoons canola or vegetable oil
  • 2 cloves garlic (minced)
  • ½ tablespoon soy sauce
  • ½ tablespoon Chinese mushroom sauce
  • Sesame seeds (for garnish)
  • Salt and pepper to taste

Instructions

  1. Bring salted water to a boil in a large pot. Prepare an ice bath in a bowl.
  2. Add bok choy to boiling water for 1 minute; drain and transfer to the ice bath.
  3. In a skillet over high heat, heat the oil and sauté garlic for about 30 seconds until fragrant.
  4. Add bok choy and stir-fry for 2-3 minutes until lightly browned.
  5. Stir in soy sauce and mushroom sauce; cook for an additional minute.
  6. Serve immediately, garnished with sesame seeds, salt, and pepper.
