  • 4 sweet potatoes
  • 1 can black beans (400 ml)
  • 1 cup cherry tomatoes
  • 1/2 cup corn
  • 1/3 cup cilantro
  • 1 avocado
  • Lime juice

Instructions

  1. Preheat the oven to 400°F (200°C). Poke holes in each sweet potato using a fork.
  2. Bake the sweet potatoes on a parchment-lined baking tray for 40 minutes to 1 hour until tender.
  3. In a bowl, mix together black beans, chopped tomatoes, corn, cilantro, diced onion, minced garlic, lime juice, olive oil, salt, pepper, and chili flakes.
  4. Mash one avocado in another bowl with lime juice and salt to create guacamole.
  5. For vegan sour cream, combine coconut yogurt with lime juice and salt in a separate bowl.
  6. Once the sweet potatoes are baked, slice them in half lengthwise and fill them with the black bean mixture. Top with guacamole and drizzle with vegan sour cream before serving.
