  • 1 lb chicken breasts or thighs
  • 1 tablespoon light soy sauce
  • 1 tablespoon dry apple juice
  • 1/2 cup chicken broth
  • 2 tablespoons cornstarch
  • 2 teaspoons coarsely ground black pepper
  • Mixed bell peppers and onion
  • 1 tablespoon minced ginger
  • 2 cloves garlic, minced
  • 2 tablespoons peanut oil

Instructions

  1. Marinate the sliced chicken with soy sauce, dry apple juice, and cornstarch for 10-15 minutes.
  2. In a small bowl, mix together chicken broth, soy sauce, dry apple juice, dark soy sauce, cornstarch, sugar, black pepper, and salt.
  3. Heat oil in a skillet over medium-high heat. Cook marinated chicken until browned on both sides.
  4. Sauté minced garlic and ginger in the same skillet before adding chopped vegetables for about 20 seconds.
  5. Pour the prepared sauce into the skillet and stir until thickened. Add back the chicken and mix until well coated.
  6. Serve hot over rice or noodles.
