  • 2 cups raw sweet potato (minced)
  • 2 large eggs
  • 3/4 cup black cocoa powder (or regular)
  • 1/2 cup coconut oil
  • 1/2 cup maple syrup
  • 1/2 cup coconut sugar
  • 1/4 cup coconut flour

Instructions

  1. Preheat your oven to 350°F (175°C). Line two 6" springform pans with parchment paper.
  2. In a food processor, finely mince the sweet potato. Transfer all cake ingredients into a blender and mix until smooth.
  3. Divide the batter between the prepared pans and bake for 45–50 minutes or until a toothpick comes out clean. Chill in the freezer while making frosting.
  4. For frosting, steam sweet potato cubes until tender, then blend with other frosting ingredients until smooth. Chill before applying to cooled cakes.
