  • 1 1/2 cups fresh broccoli florets
  • 1 cup shredded Colby cheese
  • 1 cup shredded cheddar cheese
  • 4 ounces Velveeta cheese
  • 2 1/4 cups Panko breadcrumbs
  • 3 eggs (lightly beaten)
  • Vegetable oil for frying
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 cup all-purpose flour

Instructions

  1. Steam broccoli florets until slightly softened; let cool.
  2. Finely chop cooled broccoli and mix in a bowl with Colby cheese, cheddar cheese, Velveeta, crushed red pepper flakes, 1/4 cup Panko breadcrumbs, and one egg.
  3. Shape mixture into balls (about 12-14) and refrigerate for at least 30 minutes.
  4. Set up breading stations with flour, egg mixture (2 eggs + water), and remaining Panko breadcrumbs.
  5. Heat vegetable oil in a Dutch oven to 375°F.
  6. Coat each ball in flour, dip in egg mixture, then roll in Panko.
  7. Fry balls until golden brown and drain on paper towels.
