  • 1 tsp ground cinnamon

  • 2 large eggs
  • 1 cup granulated sugar (total)
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 1/2 cups finely shredded carrots
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In one bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, beat eggs with both sugars, vegetable oil, and vanilla extract until smooth. Combine dry ingredients with wet ingredients and fold in shredded carrots and nuts if using.
  4. Pour the carrot mixture into the prepared pan and set aside.
  5. In a separate bowl, beat cream cheese until smooth; then add sugar and flour. Mix in vanilla extract followed by eggs one at a time. Stir in sour cream until well blended.
  6. Pour the cheesecake batter over the carrot layer.
  7. Bake for about 50–60 minutes until the center is slightly jiggly.
  8. Allow to cool in the oven for about 30 minutes before transferring to room temperature and chilling in the refrigerator for at least four hours.
