  • 1 pound fresh spicy chicken sausage (casing removed)
  • 1 cup chopped broccolini
  • 16 ounces pumpkin puree
  • 1/4 cup water
  • 1/4 cup whole milk ricotta cheese
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup shredded cheese (Cabot Mac 'n Cheese)
  • 1/2 cup shredded cheddar cheese (Cabot Seriously Sharp)
  • 4 sage leaves (roughly chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375 °F (191 °C). Prepare a 9×13-inch casserole dish.
  2. Cook jumbo pasta shells in boiling water for 7 minutes; drain and cool in ice water.
  3. In a skillet over medium-high heat, brown the spicy chicken sausage, then add chopped broccolini until softened.
  4. In the same skillet, combine pumpkin puree, water, ricotta cheese, and nutmeg over medium-low heat until bubbly. Stir in both cheeses and sage until melted.
  5. Mix cooked sausage and broccolini with some sauce; stuff into each cooled shell and place in the casserole dish.
  6. Pour remaining sauce over stuffed shells, adding more cheese on top if desired.
  7. Bake for 15-20 minutes until bubbly.
