  • 1/2 cup melted unsalted brown butter
  • 1/2 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 tbsp pure vanilla extract
  • 1 1/2 cups cake flour (or all-purpose flour)
  • 1 1/2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp kosher salt
  • 1/2 cup apple cider reduction (for frosting)
  • 4 oz cream cheese, at room temperature
  • 1 cup unsalted brown butter, softened
  • 3 1/2 cups powdered sugar
  • 2 tsp ground cinnamon (for frosting)
  • 1/2 tsp vanilla extract (for frosting)
  • 2 tbsp apple cider reduction (plus extra if desired for frosting)
  • Apple slices (for garnish)
  • Cinnamon sticks (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a saucepan, combine apple cider and diced apples, stir in light brown sugar and cinnamon, then simmer until the apples are tender.
  3. Mix cornstarch with water until smooth, add it to the saucepan to thicken, then let cool.
