  • 4 chicken thighs (boneless, skinless)
  • Salt and black pepper (to taste)
  • 2 cloves garlic (minced)
  • 1 tbsp Italian seasoning
  • 1 tsp oregano
  • ¼ tsp red pepper flakes
  • ½ cup sun-dried tomatoes (drained and thinly sliced)
  • 1 cup chicken stock
  • ½ cup heavy cream
  • ¼ cup Parmesan (grated)
  • 1 tbsp cornstarch
  • ¼ cup fresh basil leaves (chopped)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Brown the chicken thighs for 2-3 minutes on each side, seasoning with salt and pepper. Remove from skillet.
  2. In the same skillet, sauté minced garlic, Italian seasoning, oregano, red pepper flakes, and sun-dried tomatoes for 2-3 minutes until fragrant.
  3. Add chicken stock and heavy cream to the pan. Stir in grated Parmesan cheese and whisk in cornstarch until dissolved.
  4. Return browned chicken to the skillet, ensuring it’s covered by the sauce. Lower heat, cover with a lid, and cook for 15-20 minutes until chicken is fully cooked through.
  5. Stir in fresh basil before serving warm with additional garnishes if desired.
