  • 2 tbsp butter or olive oil
  • 1 1/2 lb chicken thighs, cut into 1/2 inch pieces
  • 1/3 cup chopped sun-dried tomatoes
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 8 ounces cauliflower florets
  • 6 ounces fresh spinach
  • 1/2 cup heavy whipping cream
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp tomato paste
  • 1 tsp Italian seasoning

Instructions

  1. Heat butter or oil in a Dutch oven over medium heat. Season chicken with salt and pepper, then add to the pot along with sun-dried tomatoes. Sauté until chicken is cooked through (5–7 minutes), then set aside.
  2. Add remaining butter to the pot; sauté garlic, tomato paste, and Italian seasoning for about 2 minutes until fragrant. Stir in chicken broth.
  3. Add cauliflower florets; bring to a boil, then simmer for about 10 minutes until tender. Blend until smooth using an immersion blender.
  4. Return the blended mixture to the pot with chicken and sun-dried tomatoes. Stir in spinach until wilted.
  5. Mix in heavy cream and Parmesan cheese until well combined. Serve hot.
