  • 1 1/2 pounds boneless skinless chicken thighs
  • Sea salt and freshly ground black pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 2 tablespoons ghee
  • 1 large onion (sliced)
  • 3 cloves garlic (minced)
  • 3/4 cup chicken stock (or broth)
  • 3 tablespoons Dijon mustard (or whole grain)
  • 1/4 cup coconut cream (unsweetened)
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon dried thyme (or poultry seasoning blend)
  • Parsley (for garnish)

Instructions

  1. Season chicken thighs with sea salt, black pepper, and garlic powder.
  2. In a skillet over medium-high heat, add olive oil and cook chicken for 5-6 minutes on each side until golden brown. Remove and set aside.
  3. Lower the heat to medium, add ghee, and sauté sliced onion for 5-6 minutes until soft. Add minced garlic in the last minute.
  4. Pour in chicken stock to deglaze the skillet, simmer for 3 minutes, then stir in Dijon mustard, coconut cream, lemon juice, and thyme.
  5. Return the chicken to the skillet and warm through for about a minute. Adjust seasoning if needed before serving.
