  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups fresh spinach
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Halve the spaghetti squash lengthwise and scoop out the seeds. Drizzle with olive oil and season with salt and pepper.
  3. Place cut side down on a baking sheet and roast for about 30-35 minutes until tender.
  4. In a skillet over medium heat, sauté onion in olive oil until translucent. Add garlic and mushrooms; cook until mushrooms are browned. Stir in spinach until wilted.
  5. In a mixing bowl, combine cream cheese, Parmesan, nutmeg, and the cooked mixture; season to taste.
  6. Scrape out spaghetti strands from roasted squash and mix them with the filling.
  7. Spoon mixture back into squash halves, top with mozzarella, and bake for an additional 10-15 minutes until bubbly.
