  • 12 ounces chicken sausage (maple breakfast links)
  • 2 cans (15 oz each) great northern beans
  • 1 can (15 oz) whole corn kernels
  • 1 can (4 oz) diced green chilies
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (15 oz) pure pumpkin puree
  • 4 cups chicken stock
  • 8 ounces cream cheese

Instructions

  1. Remove casings from the chicken sausage. In a skillet over medium heat, cook and crumble the sausage until browned, about 8-10 minutes. Drain excess fat.
  2. In your crockpot, combine the cooked sausage with great northern beans, corn, green chilies, diced tomatoes, pumpkin puree, chicken stock, cumin, chili powder, nutmeg, and black pepper. Stir well.
  3. Cook on low for 6-8 hours to allow flavors to develop.
  4. About 20-30 minutes before serving, add room-temperature cream cheese in chunks and stir until fully incorporated.
