  • 3 pounds sirloin steak
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 small sweet onion, thinly sliced
  • 3 cloves garlic, thinly sliced
  • 1 cup unsalted beef stock
  • 1 ounce au jus gravy mix
  • 4 tablespoons unsalted butter, thinly sliced
  • Fresh chopped parsley

Instructions

  1. In a large bowl, season the sirloin pieces with kosher salt and black pepper.
  2. Heat a skillet over medium-high heat and add olive oil. Sear half the steak pieces until browned on all sides (about 2-3 minutes). Repeat with remaining oil and steak.
  3. Transfer seared steak to a 6-quart Crockpot. Top with sliced onion and garlic.
  4. Pour beef stock over the mixture and sprinkle au jus gravy mix evenly on top.
  5. Lay thin slices of butter on top of the steak.
  6. Cover and cook on HIGH for 3–4 hours or LOW for 6–8 hours until tender.
  7. Serve warm, garnished with fresh parsley if desired.
