Ingredients

Scale
  • 1 cup pancake mix
  • ¾ cup milk
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 3 tablespoons maple syrup, plus extra for serving
  • 2 tablespoons maple sugar or brown sugar (optional)
  • 4 large eggs
  • Salt and pepper to taste
  • 4 slices American cheese
  • 8 strips Turkey Bacon or 4 breakfast sausage patties, cooked until crispy
  • Butter or cooking spray for greasing

Instructions

  1. In a medium bowl, whisk together pancake mix, milk, 1 egg, and vegetable oil until just combined. Gently fold in 3 tablespoons maple syrup and maple sugar if using. Let batter rest for 5 minutes.
  2. Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray. For uniform pancakes, place a 3.5-inch round cookie cutter or mason jar ring on the cooking surface. Pour about 3 tablespoons batter into each ring. Cook pancakes for 2-3 minutes until bubbles form on the surface and edges look set. Remove the ring carefully, flip pancake, and cook for an additional 1-2 minutes until golden. Repeat to make a total of 8 pancakes. Keep warm under a towel.
  3. In the same skillet over medium heat, cook eggs using ring molds if desired. Crack eggs into rings and break yolks, seasoning with salt and pepper. Add a few drops of water to the pan, cover it, and cook for about 1-2 minutes for set whites or up to 3-4 minutes for fully cooked yolks.
  4. Cook Turkey Bacon until crispy (about 3-4 minutes per side) or heat sausage patties according to package directions until browned and cooked through.
  5. To assemble, place one pancake down as the base. Add a slice of cheese followed by the cooked egg. Top with either two strips of Turkey Bacon or one sausage patty. Finish with another pancake on top. Press gently to create your sandwich. For extra authenticity, brush tops lightly with warm maple syrup before serving.
  6. Serve immediately while warm, or keep assembled sandwiches warm in a preheated oven at 200°F until ready to serve.
