  • 2 ¾ pounds (about 5 large) Golden Delicious apples (peeled and cut into ½" cubes)
  • 1 Golden Delicious apple (peeled and grated)
  • ⅓ cup sugar
  • 2 tablespoons brown sugar
  • 1 tablespoon water
  • 1 tablespoon lemon juice
  • 1 ½ tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • ⅛ teaspoon salt
  • 2 tablespoons unsalted butter (melted)
  • ¾ + ⅓ cup gluten-free old-fashioned rolled oats (divided)
  • ⅓ cup all purpose gluten-free flour (I recommend Cup 4 Cup)
  • ⅓ cup packed brown sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons water
  • ¼ teaspoon salt
  • 8 tablespoons unsalted butter (softened and cut in 8 pieces)
  • ⅓ cup chopped nuts (pecans, walnuts, or almonds) (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine sugar, brown sugar, water, lemon juice, cornstarch, vanilla extract, ground cinnamon, ground nutmeg, and salt. Add the cubed apples and grated apple to the bowl. Toss until evenly coated.
  3. In another bowl, mix together melted butter, rolled oats (¾ cup), gluten-free flour, brown sugar, vanilla extract, water, and salt until crumbly. Fold in the soft butter pieces until you achieve a crumbly texture.
  4. Pour the apple filling into a baking dish evenly. Spread the topping mixture over the apples evenly.
  5. Bake in preheated oven for about 60 minutes or until the topping is golden brown and crisp.
