  • 200g dairy-free block butter
  • 640g vegan sweetened condensed milk
  • 250g dairy-free dark chocolate
  • 100g light brown sugar
  • 10g caster sugar
  • 1 teaspoon vanilla extract
  • Flaked sea salt (optional)

Instructions

  1. Preheat the oven to 180°C (350°F). In a mixing bowl, combine flour, caster sugar, and cold dairy-free butter until crumbly. Add vanilla extract and mix.
  2. Press the mixture into a lined baking tray and bake for 15-20 minutes until golden. Let cool.
  3. For the caramel, melt the vegan sweetened condensed milk, dairy-free butter, and light brown sugar in a saucepan over medium heat until smooth; simmer for 5-7 minutes until thickened.
  4. Pour the caramel over the cooled shortbread layer.
  5. Melt the dairy-free dark chocolate and pour over the caramel, spreading evenly. Chill in the fridge for at least an hour before slicing.
