  • 4 red onions, sliced thin
  • 4 tablespoons salted butter
  • 46 slices hearty white bread
  • 3 cups shredded Gruyere cheese
  • 1 teaspoon sugar
  • 2 tablespoons salted butter
  • 2 tablespoons all-purpose flour
  • 1/3 cup apple juice or apple vinegar
  • 1 can beef broth (14.5 oz can)
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon pepper

Instructions

  1. In a Dutch oven, melt the 4 tablespoons of butter over medium heat.
  2. Add the sliced red onions and stir to coat.
  3. Sprinkle with the teaspoon of sugar.
  4. Cook over medium heat, alternating between medium and medium-low heat to prevent burning. Stir occasionally.
  5. Allow them time to sit at the bottom of the pot to brown properly while stirring enough to avoid burning.
  6. Cook for about 35 minutes, sprinkle with salt, then spoon into a bowl and set aside.
  7. In the same Dutch oven, add 2 tablespoons of butter to deglaze the pot's bottom.
  8. Whisk in 2 tablespoons of flour until smooth.
  9. Add thyme, apple juice (or vinegar), beef broth, and pepper; stir to combine.
  10. Heat over medium heat for 3-5 minutes until it thickens slightly into a dipping consistency.
  11. Pour into a bowl and set aside until grilling is complete.
  12. Butter each side of hearty bread slices generously.
  13. Place one slice in a skillet over medium heat; toast until golden brown on one side.
  14. Flip the bread and add as much cheese and onion mixture as desired on one side; top with another slice of bread.
  15. Continue to toast until cheese has melted completely.
  16. Slice each grilled cheese sandwich in half diagonally.
