  • 100 g Haferflocken
  • 1 EL Kokosöl (30 g)
  • 1 EL Kakaopulver (15 g)
  • 200 g Cashews (mindestens eine Stunde in Wasser eingeweicht)
  • 200 g Himbeeren (frisch oder gefroren)
  • 50 g Datteln
  • 1/2 Limette (Saft einer halben Limette)
  • 1 Vanilleschote (Mark einer Schote)
  • 30 g Himbeeren (für die Dekoration)
  • Essbare Blüten

Instructions

  1. Soak cashews in water for at least one hour.
  2. Prepare the base: Blend dates, oats, coconut oil, and cocoa powder in a food processor until smooth. Press the mixture into the bottom of a lined baking dish.
  3. Prepare the filling: Blend soaked cashews, raspberries, dates, lime juice, and vanilla until creamy.
  4. Pour filling over the crust and smooth out the top with a spatula.
  5. Chill in the refrigerator for at least 2 hours to set.
  6. Garnish with fresh raspberries and edible flowers before serving.
