  • 3/4 cup granulated sugar
  • 3/4 cup powdered sugar
  • 1 1/2 teaspoons pure vanilla extract

  • 1/4 teaspoon salt
  • 3/4 cup all-purpose gluten-free flour with xanthan gum
  • 1/4 cup cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C) and position the oven rack at the lowest setting.
  2. In a small bowl, mix together the cornstarch and gluten-free flour; set aside.
  3. In a large bowl, beat cold egg whites and cream of tartar on medium speed until foamy. Gradually incorporate granulated and powdered sugars while beating on high until soft peaks form.
  4. Add vanilla extract, almond extract, and salt; continue beating until glossy meringue forms.
  5. Gently fold in the flour mixture in batches until just combined.
  6. Pour batter into an ungreased angel food cake pan, smoothing the top. Bake for 30-35 minutes until golden brown and springs back when touched.
  7. Immediately invert the pan onto a heatproof funnel or bottle to cool upside down for about 2 hours.
  8. Once cooled, run a knife around the edges to release the cake from the pan before serving.
