  • 1 package (13.29 oz) gluten-free sandwich cookies (or 2 boxes Simple Mills for Paleo)
  • 1/3 cup melted ghee or vegan butter
  • 2 cans (15 oz each) coconut cream
  • 1/3 cup honey
  • 3 tablespoons powdered vegan gelatin
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the crust by crushing the gluten-free cookies into fine crumbs and mixing with melted ghee or vegan butter. Press firmly into the bottom of a pie dish.
  2. In a bowl, whip room temperature coconut cream until fluffy. Gradually add honey and vanilla extract.
  3. Dissolve vegan gelatin in warm water as per package instructions and mix into the coconut cream mixture.
  4. Pour half of the filling into the crust, layer half of the additional cookies on top, then add the remaining filling and top with leftover cookies.
  5. Cover and refrigerate for at least four hours until set.
