  • 1/2 cup sorghum flour
  • 1/2 cup brown rice flour
  • 3/4 cup raspberry preserves
  • 3 cups shredded coconut

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a bowl, cream the softened butter and sugar until fluffy. Add eggs, milk, and vanilla; mix well.
  3. In another bowl, whisk together sorghum flour, brown rice flour, coconut flour, tapioca starch, xanthan gum, baking powder, and salt. Gradually combine with the wet ingredients.

  5. In a separate bowl, mix melted butter, eggs, sugar, shredded coconut, and vanilla for the topping. Pour over raspberry layer.
