- 3/4 cup all-purpose gluten free flour
- 4 tbsp powdered sugar
- 1/4 tsp baking powder
- 1/4 tsp xanthan gum (if needed)
- 2 oz chocolate (dairy free chocolate chips)
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper and prepare a piping bag with a star tip.
- In a mixing bowl, beat together the dairy free margarine and powdered sugar until smooth.
- Add in the gluten free flour, baking powder, and xanthan gum; mix until combined.
- Transfer the dough to the piping bag and pipe three-inch long cookie fingers onto the prepared baking sheet.
- Bake for 10-15 minutes until pale golden, monitoring closely.
- Allow cookies to cool briefly on the sheet before transferring to a wire rack.
- Melt the chocolate and dip each cookie end into it; let them set until firm.
