  • 3/4 cup all-purpose gluten free flour
  • 4 tbsp powdered sugar
  • 1/4 tsp baking powder
  • 1/4 tsp xanthan gum (if needed)
  • 2 oz chocolate (dairy free chocolate chips)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper and prepare a piping bag with a star tip.
  3. In a mixing bowl, beat together the dairy free margarine and powdered sugar until smooth.
  4. Add in the gluten free flour, baking powder, and xanthan gum; mix until combined.
  5. Transfer the dough to the piping bag and pipe three-inch long cookie fingers onto the prepared baking sheet.
  6. Bake for 10-15 minutes until pale golden, monitoring closely.
  7. Allow cookies to cool briefly on the sheet before transferring to a wire rack.
  8. Melt the chocolate and dip each cookie end into it; let them set until firm.
