  • 1 lb lean ground beef
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 3 cups cauliflower florets
  • 1 cup cauliflower rice
  • ½ cup carrot (sliced)
  • 1 cup celery (sliced)
  • 1 cup green beans
  • 14 oz canned diced tomatoes (with juices)
  • 6 cups beef broth
  • 1 teaspoon Italian seasoning
  • Salt & pepper to taste

Instructions

  1. Brown the ground beef in a large pot over medium heat along with chopped onion and minced garlic until no pink remains. Drain excess fat.
  2. Add cauliflower florets, cauliflower rice, sliced carrots, sliced celery, canned diced tomatoes, beef broth, green beans, Italian seasoning, salt, and pepper to the pot.
  3. Bring the mixture to a boil over high heat. Reduce heat to simmer and cook for about 15 minutes until vegetables are tender.
