  • 2 cups milk of choice or canned coconut milk
  • heaping 1/8 tsp salt
  • 1/4 cup Dutch cocoa powder
  • 1/3 cup sweetener (sugar, maple syrup, erythritol, or honey)
  • 1/2 cup milk of choice + 3 tbsp cornstarch
  • optional 3 oz chocolate chips or broken-up bar
  • 3/4 tsp pure vanilla extract

Instructions

  1. Heat 2 cups of milk in a saucepan over medium heat. Stir in salt, cocoa powder, and sweetener until combined.
  2. In a small bowl, whisk together 1/2 cup milk and cornstarch until fully dissolved.
  3. Add the cornstarch mixture to the warm milk mixture and bring to a boil while stirring constantly for about 2 minutes.
  4. Lower the heat and simmer for another minute before removing from heat. Stir in vanilla extract and optional chocolate pieces until melted.
  5. Transfer the pudding to a refrigerator-safe container and chill until thickened (a few hours or overnight).
