  • 1/2 cup dried shiitake or mixed dried mushrooms
  • 3 cups hot water
  • 1 tablespoon peanut or canola oil
  • 2 cups chopped onion
  • 3 garlic cloves, thinly sliced
  • 6 slices fresh ginger
  • 6 cups low-sodium chicken broth
  • 1/4 cup low-sodium soy sauce
  • 2 pounds boneless, skinless chicken thighs
  • 1 bulb fennel, cut into pieces
  • 8 green onions
  • 1 pound bok choy
  • 2 cups mung bean sprouts
  • 1/2 cup fresh cilantro, chopped
  • 2 teaspoons sesame oil, toasted
  • Lime wedges for serving

Instructions

  1. Soak dried mushrooms in hot water for about 20 minutes. Chop into bite-sized pieces and reserve the soaking liquid.
  2. In a large pot over medium heat, add peanut or canola oil. Sauté onions until translucent (about 5 minutes). Add garlic and ginger; cook for an additional minute.
  3. Stir in chicken broth, soaked mushrooms with their liquid, soy sauce, cinnamon stick, star anise, and black pepper. Bring to a simmer.
  4. Add chicken thighs and cook for about 15 minutes until thoroughly cooked.
  5. Incorporate fennel, green onion whites, and bok choy stems. Cook for another 5 minutes until vegetables are tender.
  6. Finish by adding mung bean sprouts, bok choy leaves, cilantro, and drizzle with sesame oil before serving.
