  • 1/2 cup cocoa powder
  • 16 oz cream cheese
  • 2/3 cup Joy Filled Eats Sweetener (or alternative)
  • 3/4 cup sugar-free chocolate chips
  • 4 oz heavy cream

Instructions

  1. Prepare the Crust: Mix almond flour, cocoa powder, sweetener, melted butter, and cream cheese until well combined. Press into the bottom of a 9-inch springform pan.
  2. Make the Cheesecake Filling: Dissolve vegan gelatin in cold water. In another bowl, mix cream cheese, sweetener, cocoa powder, heavy cream, sour cream, vanilla extract, baking soda, and dissolved gelatin until smooth.
  3. Assemble the Cheesecake: Pour the cheesecake filling over the crust and smooth the top with a spatula.
  4. Prepare Ganache Topping: Melt sugar-free chocolate chips with heavy cream in a saucepan over low heat. Pour ganache over the cheesecake layer.
  5. Chill: Cover with plastic wrap and refrigerate for at least 4 hours or overnight until fully set.
