  • 1/2 cup onion (diced)
  • 6 cloves garlic (minced)
  • 2 1/2 pounds very lean ground beef
  • 1 cup beef broth
  • 4 tbsp chili powder
  • 2 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1 can (14.5 oz) fire roasted tomatoes (diced)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 1 can (4 oz) diced green chiles

Instructions

  1. Prepare Ingredients: Gather all ingredients on your countertop. Dice the onion and mince the garlic.
  2. Sauté Aromatics: In your cooking vessel, heat olive oil over medium heat. Add onion and sauté until translucent; then add garlic and sauté for one more minute.
  3. Brown Beef: Add ground beef to the pot, cooking until browned while breaking it up with a spoon. Drain excess fat if necessary.
  4. Add Seasonings and Tomatoes: Stir in chili powder, sea salt, black pepper, cumin, beef broth, fire roasted tomatoes, diced tomatoes, tomato paste, and green chiles until well combined.
  5. Cook Chili: Depending on your chosen method: Instant Pot: Seal lid and cook on high pressure for 30 minutes; then release pressure. Slow Cooker: Cook on low for 6–8 hours or high for about 3–4 hours. Stovetop: Bring to boil, reduce heat, and simmer for about 30 minutes.
