  • 4 large carrots
  • 3 large apples
  • 1 onion
  • 5 cloves garlic
  • ¼ cup olive oil or aquafaba
  • ¼ cup maple syrup
  • 3 tablespoons Dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon thyme

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Core and chop apples into ½” cubes; slice carrots on the bias into ¼” thick pieces; dice onion; finely chop garlic.
  3. In a large mixing bowl, whisk together olive oil, maple syrup, Dijon mustard, salt, black pepper, and thyme.
  4. Add chopped vegetables to the bowl and toss until well coated.
  5. Spread the mixture evenly on a baking sheet.
  6. Roast for 15 minutes; flip the vegetables to brown the other side.
  7. Roast for another 10-15 minutes until tender and lightly caramelized.
