  • 16 ounces extra-firm tofu
  • 16 ounces vegan gnocchi
  • 78 large garlic cloves
  • 1 ½ cups vegetable broth
  • ½ cup white apple vinegar
  • 1 ½ cups oat milk or cashew cream
  • ½ cup vegan cheese (parmesan or mozzarella)
  • 1 jar sun-dried tomatoes

Instructions

  1. Press tofu for at least 1 hour, then cube and coat with arrowroot starch, salt, and pepper.
  2. Sauté tofu in a large skillet with vegan butter until golden brown; set aside.
  3. In the same skillet, sauté garlic until golden, then deglaze with vegetable broth and vinegar.
  4. Stir in oat milk/cashew cream, flour, and vegan cheese; simmer until thickened.
  5. Boil gnocchi according to package instructions until they float; reserve some pasta water.
  6. Combine fried tofu and cooked gnocchi with the sauce; adjust thickness with reserved pasta water if needed.
  7. Serve hot, garnished with fresh basil.
