  • 8 oz salted butter
  • 2 cups heavy cream
  • 1 1/4 cup sweetener
  • 1/2 cup raw cacao butter
  • 1 cup peanut butter powder
  • 16 oz cream cheese
  • 2 tsp Vegan Gelatin
  • 3 oz cold water
  • For the crust: peanut flour or peanut butter powder, almond flour, powdered sweetener

Instructions

  1. In a medium saucepan, melt butter and combine with heavy cream and sweetener over medium heat until slightly thickened.
  2. Stir in cacao butter and peanut butter powder; refrigerate until thickened to pancake batter consistency (about 2 hours).
  3. Dissolve Vegan Gelatin in cold water and mix into whipped cream cheese until fluffy.
  4. Combine chilled peanut mixture with cream cheese mixture until fully blended.
  5. Prepare the crust by mixing the crust ingredients and pressing into an 8-inch springform pan.
  6. Pour cheesecake filling over the crust, chill in the refrigerator for at least 8 hours or overnight before serving.
