  • 1 cup unsweetened shredded coconut
  • 1/8 tsp salt (optional)
  • 1 cup coconut cream
  • 1 cup dark chocolate chips (60-75% dark)
  • 1/2 cup creamy, no-stir almond butter
  • 1/2 tsp vanilla extract (optional)

Instructions

  1. Line the bottom of a 6" round springform pan with parchment paper.
  2. In a food processor, blend the pecans, shredded coconut, and salt until clumping together.
  3. Press the crust mixture into the bottom of the springform pan evenly.
  4. Melt the chocolate chips and coconut cream in a small saucepan over low heat, stirring until smooth.
  5. Remove from heat and whisk in almond butter and vanilla extract until combined.
  6. Pour the filling over the crust and chill in the refrigerator for at least 2 hours until firm.
  7. Slice into equal pieces and serve chilled.
