  • 1/4 cup melted coconut oil
  • 2/3 cup almond milk, room temperature
  • 1 cup shredded carrots
  • 1/4 cup chopped pecans (optional)
  • 1/4 cup raisins (optional)
  • 2 tablespoons unsweetened shredded coconut (optional)
  • 1/4 cup coconut butter
  • 1/4 cup maple syrup
  • 2 tablespoons vegan butter alternative
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 or 9×9 baking pan with parchment paper.
  2. In a large mixing bowl, combine almond flour, coconut flour, coconut sugar, cinnamon, ginger, nutmeg, and salt. Mix well.
  3. Add melted coconut oil and almond milk to the dry mixture; stir until combined. Fold in shredded carrots and any optional add-ins like pecans or raisins.
  4. Pour the batter into the prepared pan and spread evenly. Bake for 30-33 minutes or until edges are lightly brown.
  5. Let cool completely before frosting with a mixture of coconut butter, maple syrup, vegan butter alternative, vanilla extract, and salt.
