  • 4 boneless skinless chicken breasts (6 ounces each)
  • 1 egg
  • ⅓ cup almond flour
  • ⅓ cup grated parmesan cheese
  • 16 ounces marinara sauce (low carb)
  • 1 cup ricotta cheese
  • 2 cups grated mozzarella cheese
  • 3 ounces fresh baby spinach
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F.
  2. Whisk the egg in a shallow bowl.
  3. In another bowl, mix almond flour, parmesan cheese, garlic salt, Italian seasoning, and pepper.
  4. Dredge chicken pieces in egg wash, then coat with the dry mixture.
  5. Heat olive oil in an ovenproof skillet over medium-high heat and sear chicken for about 4 minutes per side until golden brown. Remove from pan.
  6. Sauté spinach in the same skillet until wilted (1-2 minutes).
  7. Cut the seared chicken into bite-sized pieces and return to the skillet. Add marinara sauce and ricotta; stir well.
  8. Top with mozzarella cheese and bake for 20-22 minutes until bubbly.
