  • 1.5 lbs beef sirloin or flank steak, thinly sliced
  • 3 bell peppers (red, green, yellow), cut into chunks
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1/3 cup soy sauce
  • 1 cup beef broth
  • 2 tablespoons brown sugar
  • 2 tablespoons cornstarch
  • Salt and black pepper to taste

Instructions

  1. Season the thinly sliced beef with salt and pepper.
  2. Layer seasoned beef at the bottom of the slow cooker and add bell peppers and onion on top.
  3. In a mixing bowl, whisk together soy sauce, beef broth, garlic, brown sugar, and red pepper flakes. Pour over the meat and veggies.
  4. Cook on LOW for 6–7 hours or HIGH for 3–4 hours until tender.
  5. In the last 30 minutes, mix cornstarch with cold water and stir into the slow cooker to thicken the sauce.
  6. Serve hot over rice, noodles, or mashed potatoes.
