  • 100g fresh raspberries (or thawed frozen)
  • 1 tbsp lemon zest
  • 4 tbsp maple syrup

  2. Melt the creamed coconut in a heat-proof bowl over simmering water, stirring until smooth.
  3. Blend in the fresh raspberries, lemon zest, and maple syrup until creamy.
  4. Press the mixture into the lined loaf pan and refrigerate for 2 hours or freeze for 20-30 minutes until firm.
  5. Slice into squares or triangles before serving.
