  • 1/2 cup unsalted butter (or vegan baking stick)
  • 1 1/4 cups plus 2 tablespoons granulated sugar (for wet ingredients)
  • 1.5 tablespoons cornstarch
  • 1.5 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 3 tablespoons milk
  • 2 heaping tablespoons cornstarch mixed with 3 tablespoons water
  • 3 tablespoons raspberry syrup
  • 3 drops red food coloring (optional)
  • 1/2 cup frozen raspberries (chopped into tiny pieces)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine gluten-free flour, cornstarch, baking powder, and salt; whisk until mixed.
  3. In another bowl, cream the unsalted butter and sugar until fluffy. Gradually add the cornstarch-water mixture.
  4. Fold the dry mixture into the wet mixture gently until combined; fold in chopped frozen raspberries.
  5. Drop heaping tablespoons of dough onto the prepared baking sheet.
  6. Bake for about 15 minutes or until edges are golden brown; cool before serving.
