  • 4 large carrots
  • 1 medium/large yellow onion
  • 4 large cloves garlic
  • 1 can full-fat coconut milk
  • 5 cups vegetable or chicken broth

Instructions

  1. Sauté chopped onion and minced garlic in olive oil over medium heat for about 5 minutes until softened.
  2. Add chopped carrots and spices; sauté for another 5 minutes until the carrots begin to soften.
  3. Stir in red lentils, tomato paste, coconut milk, and broth; mix well.
  4. Bring to a boil then reduce to low heat, cover, and simmer for about 20 minutes or until the lentils are tender.
  5. Blend the soup until smooth using a high-speed blender or immersion blender.
  6. Taste and adjust seasonings if needed; add more broth if it's too thick.
  7. Serve hot, garnished with fresh parsley or red pepper flakes if desired.
