  • 5 cups Butternut Squash (cubed)
  • 1/2 bulb Garlic (bottom half only)
  • 1/3 cup Olive Oil
  • 1/4 tsp Kosher Salt
  • 4 leaves Sage
  • 8 oz Feta Chunk
  • 32 oz Vegetable Broth (4 cups)
  • 2 tbsp Honey

Instructions

  1. Preheat your oven to 400°F.
  2. In a Dutch oven, combine olive oil, butternut squash, salt, and sage. Toss to coat.
  3. Place the feta in the center and surround it with the garlic cut side down. Cover and roast for 45 minutes to 1 hour until tender.
  4. Remove from the oven; squeeze out the softened garlic into the pot.
  5. Add honey and vegetable broth. Blend until smooth using a blender or immersion blender.
  6. Taste and adjust seasoning if necessary before serving.
