  • 2 medium zucchini, sliced into half-moons
  • 8 oz (225 g) cremini or white button mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional, for heat)
  • Salt and black pepper, to taste
  • 2 tablespoons grated Parmesan cheese (optional, for garnish)
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

  1. Heat 2 tablespoons of olive oil or butter in a large skillet over medium heat.
  2. Add 8 oz of sliced mushrooms and cook for 5-7 minutes until browned.
  3. Stir in 2 medium zucchini slices and cook for an additional 5-7 minutes until tender yet crisp.
  4. Add 2 minced garlic cloves, 1 teaspoon Italian seasoning, optional red pepper flakes, salt, and black pepper. Stir for another 1-2 minutes until fragrant.
  5. Remove from heat and garnish with optional Parmesan cheese and parsley before serving warm.
