  • 23 garlic cloves, minced
  • 1 large sweet potato (about 1 lb.), diced
  • 2 cans black beans, drained and rinsed
  • 1 can fire-roasted diced tomatoes
  • 1 can tomato paste
  • 2 cups vegetable broth

Instructions

  2. Stir in chili powder, cumin, oregano, garlic powder, and onion powder; cook until fragrant.
  3. Add black beans, diced tomatoes (with juices), tomato paste, sweet potato, green chilies, and vegetable broth. Mix well.
  4. Bring to a boil; reduce heat to low and simmer uncovered for 30–40 minutes until sweet potatoes are tender.
