- 10 sun-dried tomatoes, chopped
- 7 oz full-fat canned coconut milk
- 4 garlic cloves, minced
- 2 cups cherry tomatoes
- 3 tbsp nutritional yeast
- 1 tbsp Italian seasoning
- 1 tbsp balsamic vinegar
- 2 cups baby arugula
- Boil water in a pot and cook gluten-free fettuccine until al dente.
- In a skillet, sauté minced garlic and sun-dried tomatoes with water or broth for 2 minutes.
- Add Italian seasoning, balsamic vinegar, and tomato paste; cook for 2-3 minutes until caramelized.
- Mix in cherry tomatoes and broth; cover and simmer for 3-4 minutes until soft.
- Stir in coconut milk and nutritional yeast; season with salt and pepper to taste. Simmer for another 5-10 minutes until thickened.
- Combine cooked pasta with the sauce and toss with fresh arugula.
