  • 4 servings gluten-free fettuccine
  • 10 sun-dried tomatoes, chopped
  • 7 oz full-fat canned coconut milk
  • 4 garlic cloves, minced
  • 2 cups cherry tomatoes
  • 3 tbsp nutritional yeast
  • 1 tbsp Italian seasoning
  • 1 tbsp balsamic vinegar
  • 2 cups baby arugula

Instructions

  1. Boil water in a pot and cook gluten-free fettuccine until al dente.
  2. In a skillet, sauté minced garlic and sun-dried tomatoes with water or broth for 2 minutes.
  3. Add Italian seasoning, balsamic vinegar, and tomato paste; cook for 2-3 minutes until caramelized.
  4. Mix in cherry tomatoes and broth; cover and simmer for 3-4 minutes until soft.
  5. Stir in coconut milk and nutritional yeast; season with salt and pepper to taste. Simmer for another 5-10 minutes until thickened.
  6. Combine cooked pasta with the sauce and toss with fresh arugula.
