  • 30 g cocoa powder
  • 4 Tbsp boiling water
  • 120 g silken tofu
  • 200 ml unsweetened non-dairy milk
  • 1 Tbsp vanilla extract
  • 1 ½ tsp cider or white vinegar
  • 240 g all-purpose flour
  • 25 g cornflour (cornstarch)
  • 1 ½ tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 275 g caster sugar
  • 120 g vegan block butter (melted)
  • 45 ml neutral oil (sunflower/vegetable/canola/mild olive)

Instructions

  1. Preheat the oven to 180°C/350°F and prepare a loaf tin with baking parchment.
  2. Whisk cocoa powder with boiling water in a bowl until smooth; set aside.
  3. Blend silken tofu, non-dairy milk, vanilla extract, and vinegar until smooth.
  4. In another bowl, mix flour, cornflour, baking powder, baking soda, salt, and sugar until combined.
  5. Stir melted butter and oil into the dry ingredients, then gradually add blended wet mixture to form a smooth batter.
  6. Incorporate half of the batter into the cocoa mixture for the chocolate layer.
  7. Layer batters alternately in the prepared tin and swirl gently with a skewer.
  8. Bake for 60-75 minutes or until a skewer comes out clean; cool before slicing.
