  • 3/4 cup wild rice blend
  • 4 cups assorted diced mushrooms (white button, Crimini, Shiitake)
  • 1 cup diced white onion
  • 2 cloves minced garlic
  • 2 tablespoons vegan butter (or oil)
  • 1 teaspoon dried parsley
  • 56 cups vegetable broth
  • 14-ounce can coconut milk
  • Salt and pepper to taste

Instructions

  1. Rinse and soak wild rice in cold water for 15-30 minutes.
  2. While soaking, slice mushrooms, dice onions, and mince garlic.
  3. In a large pot over medium heat, melt vegan butter; add onions, garlic, and mushrooms. Sauté for about 15 minutes until onions are translucent.
  4. Stir in parsley, salt, and pepper; pour in vegetable broth and add soaked wild rice.
  5. Mix in coconut milk; bring to a boil then reduce heat to low and cover. Simmer for about 20 minutes.
  6. Remove the lid and continue cooking uncovered for another 15-20 minutes until rice is tender.
  7. Let sit for 5 minutes before serving.
